Asian Peanut Slaw


This salad is so good! It's crisp, crunchy and refreshing. Recipe adapted from The Kitchn.

Ingredients:
1 large head of cabbage (sliced into bite-size shreds)
3/4 cup shredded carrots (about 2-3 carrots)
3/4 cup chopped cilantro
2 cups chopped green onions (about 1 bunch, including green & white pieces)
1.5 cups lightly salted peanut (or unsalted)

Dressing:
1/2 cup olive oil (you can use canola if you want)
5 tbsp rice vinegar
1 tbsp sugar
1 tbsp soy sauce
3-4 tbsp toasted sesame seeds

If you don't have toasted sesame seeds, you can toast them really easily. Just stick them in a flat pan (no oil or anything else) on medium heat until they are golden-dark brown. Toss them around a couple times during the process.

I have to tell you that the least fun part about this recipe is chopping everything. Start with the cabbage. Make sure to remove the outer leaves of the cabbage, and cut out the hard piece at the bottom that holds it together (does this part have a name?). You need to chop it up in to fine shreds.

Then chop up all the green onion, and shred the carrots. (I wanted to add more carrots, but like I said, I'm not a big fan of chopping veggies).

Then chop up the cilantro. Be sure not to include stems (a little is ok). I usually hold the cilantro bunch at the bottom, and take a sharp knife and "shave" the cilantro leaves off. A lot faster and not as delicate as you would shave your legs or face though. Its a lot faster than picking them off. Then I pick out any pieces of the stem that's left. After that, chop the leaves up.

It's not important to exactly measure any of the produce ingredients.



Put all the veggies in a large bowl and mix it around (easiest with your hand, but the carrots and cilantro stick to you). Then add the peanuts and mix again (with a spoon this time).

Then mix everything together for your dressing, and whisk it together well.

Pour over your salad and mix again. Now, enjoy our healthy treat!
